Ingredients/Components

  • butter - 1/3 c
  • sugar - 3/4 c
  • eggs - 2 item
  • can evaporated milk - 1 oz
  • vanilla extract - 1 tsp
  • mashed cooked butternut squash - 2 c
  • crisp rice cereal
  • packed brown sugar - 1/4 c
  • chopped pecans - 1/4 c
  • butter, melted - 2 Tbsp

How to make butternut squash bake:

Topping:1/2 c. crisp rice cereal1/4 c. packed brown sugar1/4 c. chopped pecans2 Tbsp. butter, melted In mixing bowl, cream butter and sugar. Beat in eggs, milk and vanilla. Stir in squash (mixture will be thin). Pour into greased 11 x 7 x 2-inch baking pan. Bake, uncovered, for 45 minutes at 350°, or until almost set.

Combine topping ingredients; sprinkle over casserole. Return to oven for 5 to 10 minutes, or until bubbly. Yield: 6 to 8 servings.
