Butternut squash bake
Ingredients/Components
- butter - 1/3 c
- sugar - 3/4 c
- eggs - 2 item
- can evaporated milk - 1 oz
- vanilla extract - 1 tsp
- mashed cooked butternut squash - 2 c
- crisp rice cereal
- packed brown sugar - 1/4 c
- chopped pecans - 1/4 c
- butter, melted - 2 Tbsp
How to make butternut squash bake:
Topping:1/2 c. crisp rice cereal1/4 c. packed brown sugar1/4 c. chopped pecans2 Tbsp. butter, melted In mixing bowl, cream butter and sugar. Beat in eggs, milk and vanilla. Stir in squash (mixture will be thin). Pour into greased 11 x 7 x 2-inch baking pan. Bake, uncovered, for 45 minutes at 350°, or until almost set.Combine topping ingredients; sprinkle over casserole. Return to oven for 5 to 10 minutes, or until bubbly. Yield: 6 to 8 servings.
