Buttermilk sherbet
Ingredients/Components
- vanilla - 1 Tbsp
- egg yolks - 2 item
- buttermilk - 1 qt
- egg whites - 2 item
- lemon juice - 1 Tbsp
- fresh peaches 5 c - 2 lb
- honey 12 Tbsp - 3/4 c
How to make buttermilk sherbet:
Peel, pit and slice peaches. Puree them in an electric blender. In a large bowl, combine egg yolks and 6 tablespoons of honey mixture. Add lemon juice and vanilla.Beat egg whites stiff and then add the remaining 6 tablespoons of honey, very slowly, while continuing to beat the egg whites. Fold beaten egg whites into egg yolk mixture, carefully, and freeze sherbet according to preferred method. Yield: Makes approximately 2 quarts.
