Ingredients/Components

  • sugar - 1 c
  • vanilla - 1 tsp
  • flour - 4 Tbsp
  • butter - 1 Tbsp
  • egg yolks - 3 item
  • buttermilk - 2 c
  • egg whites - 3 item
  • egg, beaten - 1 item
  • lemon extract - 1 Tbsp
  • pastry shell - 1 item

How to make buttermilk pie:

Sift together sugar and flour. Add one egg well beaten with the yolks of 3 eggs. Add fresh cultured buttermilk. Stir and cook until thick and creamy. Remove from fire. Add butter and lemon extract. Let cool slightly and pour into a baked pastry shell. Cover with meringue. Spread smoothly upon the pie. Bake 15 minutes at 350°.

Meringue: Measure 1/3 cup sugar and 3 egg whites. Beat until sugar has lost its grain.
