Buttermilk chicken



  • butter or margarine - 1/4 c
  • salt - 2 tsp
  • flour - 1 c
  • buttermilk - 2 c
  • pepper - 1/4 tsp
  • cream of chicken soup - 1 (10
  • fryer chicken, cut up, or 4 large chicken breasts - 1 item

How to make buttermilk chicken:

Dip chicken in 1 cup buttermilk, then roll in flour, seasoned with salt and pepper. Melt butter in 13 x 9 x 2-inch pan and put chicken skin side down. Bake, uncovered, in 375° oven for 30 minutes. Turn chicken and bake 15 minutes more. Blend remaining 1 cup of buttermilk and soup. Pour over chicken. Bake 15 minutes more or until done. Serve over rice or mashed potatoes.
