Ingredients/Components

  • buttermilk - 2 c
  • butter, melted - 1/2 c
  • paprika - 2 tsp
  • pepper - 1 tsp
  • Parmesan cheese - 1/2 c
  • cornflake crumbs - 2 c
  • chicken, remove skin chicken breasts may be used - 2 lb

How to make buttermilk chicken:

Combine first four ingredients together. Mix well. In a separate bowl, add buttermilk. Dip chicken pieces or chicken breasts into buttermilk and then into batter. Place into foil lined pan (13 x 9-inch). Cover with foil. Bake at 400° for 45 minutes. Remove from oven, uncover and pour melted butter over chicken. Bake, uncovered, an additional 15 minutes at 425°.
