Brunch pie
Ingredients/Components
- eggs - 3 item
- flour - 1 Tbsp
- evaporated milk - 1/2 c
- margarine or butter - 3 Tbsp
- dry mustard - 1/2 tsp
- chopped onion - 1/2 c
- grated Cheddar cheese - 1 c
- can mixed vegetables, drained - 1 oz
- cans corned beef hash - 2 oz
- garlic powder and black pepper to taste - 1 item
How to make brunch pie:
Coat a 9-inch pie plate with butter. Mix hash and one beaten egg. Press into plate to form crust. Bake at 375° for 10 minutes. Saute onion in 3 tablespoons butter. Layer cheese, sauteed onion and mixed vegetables in crust. Beat together remaining eggs, milk, flour, mustard, garlic powder and pepper. Pour over mixture in crust. Bake at 350° for 30 to 40 minutes, until filling is set. Let stand 10 minutes before serving. Makes 6 servings.Recipe categories: Breakfast, Appetizers, One Dish meal.
