Ingredients/Components

  • eggs - 3 item
  • flour - 1 Tbsp
  • evaporated milk - 1/2 c
  • margarine or butter - 3 Tbsp
  • dry mustard - 1/2 tsp
  • chopped onion - 1/2 c
  • grated Cheddar cheese - 1 c
  • can mixed vegetables, drained - 1 oz
  • cans corned beef hash - 2 oz
  • garlic powder and black pepper to taste - 1 item

How to make brunch pie:

Coat a 9-inch pie plate with butter. Mix hash and one beaten egg. Press into plate to form crust. Bake at 375° for 10 minutes. Saute onion in 3 tablespoons butter. Layer cheese, sauteed onion and mixed vegetables in crust. Beat together remaining eggs, milk, flour, mustard, garlic powder and pepper. Pour over mixture in crust. Bake at 350° for 30 to 40 minutes, until filling is set. Let stand 10 minutes before serving. Makes 6 servings.
