Ingredients/Components

  • cubed fully cooked ham - 2 c
  • chopped green onions - 1/2 c
  • 8-inch flour tortillas - 10 item
  • shredded Cheddar cheese - 2 c
  • flour - 1 Tbsp
  • light cream - 2 c
  • eggs, beaten - 6 item
  • salt - 1/2 tsp
  • eggs - 3 item
  • cold water - 1/3 c
  • hot red pepper sauce I use Texas Pete
  • self-rising flour - 2 c
  • pepper - 1 tsp
  • chicken - 2 2
  • oil for frying - 1 item
  • House Seasoning follows - 1 item

How to make brunch enchiladas:

In a bowl, beat the eggs with water. Add enough hot sauce so the eggs are bright orange. In another bowl, combine the flour and pepper. Season the chicken with the House Seasoning. Dip the chicken in the egg mixture and then coat well in the flour mixture.

Heat the oil to 350° in a deep pot. Don't fill the pot more than 1/2 full with oil. Fry the chicken in the oil until brown and crisp. Dark meat takes longer (about 13 to 14 minutes) and the white meat around 8 to 10 minutes.
