  • chopped pecans - 1 c
  • pkg - 1 lb
  • packed brown sugar - 1 c
  • vanilla extract
  • salt - 1 tsp
  • evaporated milk - 1 c
  • coconut - 1 c
  • baking powder - 1/2 tsp
  • shortening - 1 c
  • sifted cake flour
  • Glaze - 1 item
  • Add sugar and brown sugar gradually; beat until fluffy

How to make brown sugar pound cake:

Cream butter and shortening in large mixer bowl until light. Add sugar and brown sugar gradually; beat until fluffy. Add vanilla; mix well. Add eggs one at a time, beating well after each addition. Sift flour, baking powder and salt together. Add to creamed mixture alternately with evaporated milk, beating well after each addition. Stir in coconut and pecans. Pour into well-greased and floured 10-inch tube pan. Bake at 325° for 1 hour and 40 minutes. Cool in pan for several minutes. Invert onto serving plate. Spread glaze over cake. Yield: 16 servings.Glaze:1/3 c. butter1 c. packed brown sugar1/4 c. evaporated milk1 tsp. vanilla extract Melt butter in small saucepan. Add brown sugar; stir until dissolved. Stir in evaporated milk. Bring to a rolling boil, stirring constantly. Boil for 2 minutes, stirring constantly. Remove from heat. Cool. Stir in vanilla. Beat until smooth.
