Ingredients/Components
- mayonnaise - 1/4 c
- minced parsley - 2 Tbsp
- minced shallot or green onion white part only - 1/4 c
- grated Parmesan or Gruyere cheese - 1/4 c
- large, ripe tomatoes, sliced into thirds or 3 small tomatoes - 2 item
How to make broiled tomatoes:
Preheat broiler. Combine all ingredients, except tomatoes, in small bowl and blend well. Gently spread mixture about 1/4-inch thick on tomatoes. Broil 4-inches from heat source 2 to 3 minutes or until lightly browned, watching carefully so that topping does not burn. Serve immediately.These cheese-topped tomatoes harmonize well with veal, chicken or fish dishes. Makes 6 servings.
