Broccoli soup
Ingredients/Components
- butter or margarine - 4 Tbsp
- flour - 4 Tbsp
- egg yolks - 2 item
- salt and pepper to taste - 1 item
- onions, chopped - 2 item
- cream or milk - 1 c
- each pkg - 2 oz
- chicken stock 6 c
How to make broccoli soup:
Melt butter or margarine in a large soup pot. Add chopped onions and cook until soft and translucent. Add flour. Cook another minute. Add chicken stock, broccoli and seasonings. Bring to a boil. Simmer 20 minutes or until broccoli is tender.Puree in blender. Put through strainer or food mill to remove coarse fibers. Reheat, check seasoning. Mix egg yolks and cream of milk together and add to soup.
Note: Do not let soup boil after adding egg yolks or it will curdle.
