Broccoli soup
Ingredients/Components
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- olive oil - 2 Tbsp
- Parmesan cheese, grated - 3 Tbsp
- bunch broccoli, chopped - 1 item
- celery salt optional - 1/2 tsp
- celery with leaves - 1 c
- fat-free beef broth or 2 c - 2 c
- milk if desired - 1 c
How to make broccoli soup:
In medium saucepan, cook celery and onion in oil until wilted. Add all ingredients except milk and Parmesan cheese. Bring to a boil; cover and simmer until broccoli is tender. Puree before adding milk and cheese. Reheat. Serves 4.Recipe categories: Vegetables, Soups & stews, Broccoli.
