Ingredients/Components

  • salt - 1/2 tsp
  • 1 oz - 1/4 c
  • chopped onion - 1 c
  • 4 oz - 1 c
  • black pepper - 1/4 tsp
  • cooked brown rice - 2 c
  • bag frozen broccoli pieces - 1 item
  • low-fat low-sodium chicken broth - 1 c
  • reduced fat sour cream - 3/4 c
  • Italian-seasoned bread crumbs - 1/4 c
  • fat-free egg substitute - 1/4 c

How to make broccoli rice casserole:

Cook rice in salted water. Rinse very little. Fry bacon. Fry onion in butter. Mix rice, bacon, onion and can of diced tomatoes. Bake at 350° for 30 minutes.

Could add uncooked bacon to top of casserole instead of cooking ahead.
