  • chicken broth - 1/4 c
  • olive oil - 1 Tbsp
  • minced garlic - 1 tsp
  • bunch broccoli rabe, ends trimmed and cut into 3-inch pieces - 1 lb
  • each salt and black pepper - 1/4 tsp

How to make broccoli rabe:

In boiling salted water, cook rabe 2 1/2 minutes, until crisp-tender; drain.

In skillet, heat oil over medium-high. Add garlic; cook 30 seconds. Add rabe and broth; cook 2 minutes until broth cooks off and rabe is just tender. Season with the salt and pepper. Makes 4 servings.
