  • large potatoes - 2 item
  • butter - 2 Tbsp
  • salt - 1/4 tsp
  • pepper - 1 item
  • onion, finely chopped - 1/2 c
  • Filling:2 egg whites
  • evaporated skim milk - 1 c
  • egg yolk - 1 item
  • Jack cheese, shredded - 1/2 c
  • 10 oz - 1 pkg

How to make broccoli quiche:

Filling:2 egg whites1 c. evaporated skim milk1 egg yolk1/4 tsp. salt1/8 tsp. pepper1/2 c. Jack cheese, shredded1 pkg. (10 oz.) frozen broccoli, chopped Preheat oven to 375°. Scrub unpeeled potatoes, cut into chunks and boil until soft. Drain well and mash. Add margarine, salt, pepper and minced onion. Mix well and spoon into 9-inch pie plate that has been sprayed with Pam. Bake 45 minutes. While crust is baking, prepare filling. In a small bowl beat together milk, egg whites, yolk, salt and pepper. Remove crust from oven. Lower temperature to 350°. Put thawed broccoli on warm crust. Sprinkle with Cheddar cheese. Pour milk and egg mixture over broccoli and cheese. Return to oven and bake for 30 minutes or until custard is set. Wait a few minutes before serving.
