Ingredients/Components

  • frozen broccoli or fresh, cut in pieces and steamed - 2 pkg
  • stewing hen or 4 chicken breasts, cooked and deboned - 1 item
  • can cream of chicken soup - 1 item
  • can cream of mushroom soup - 1 item
  • mayonnaise - 1 c
  • lemon juice - 1 tsp
  • butter - 1/4 lb
  • green onions, chopped - 4 item
  • cooked rice - 3 c
  • can mushrooms optional - 4 oz
  • toasted almonds
  • grated cheese - 8 10

How to make broccoli, chicken and rice casserole:

Toppings:1 c. toasted almonds8 to 10 oz. grated cheese Melt butter in saucepan and saute the onions until soft and lightly brown. Add undiluted soups, mayonnaise and lemon juice; set aside. Combine chicken (big pieces), rice and broccoli and place in large, buttered casserole dish. Pour soup mixture over that and layer cheese, drained mushrooms and almonds on top of rice mixture. Bake at 350° for 25 to 30 minutes.
