Broccoli cheese soup
Ingredients/Components
- salt - 1/4 tsp
- flour - 1/4 c
- nutmeg - 1/8 tsp
- margarine - 5 Tbsp
- pepper - 1/4 tsp
- skim milk
- chopped celery - 1/2 c
- chicken broth
- chopped carrots - 1 c
- chopped green onion - 1/2 c
- sharp Cheddar cheese, grated - 4 oz
- broccoli florets - 3 c
- chopped yellow onion - 1/4 c
- large clove garlic, peeled and chopped - 1 item
How to make broccoli cheese soup:
In heavy 4-quart kettle, melt 1 tablespoon margarine and saute yellow onion and garlic for 2 minutes. Stir in chicken broth. Add broccoli florets, carrots, celery and green onion.
