Ingredients/Components

  • milk - 1/2 c
  • salt - 1 tsp
  • flour - 7 Tbsp
  • nutmeg - 1/4 tsp
  • melted butter - 5 Tbsp
  • pepper - 1/2 tsp
  • fresh broccoli
  • canned or fresh chicken broth - 5 c
  • grated cheese 1/2 Velveeta and 1/2 mild Cheddar - 1 c

How to make broccoli cheese soup:

Wash and chop broccoli. Cook 5 minutes in boiling salt water. Melt butter in a 2 or 3-quart pan. Add flour, stirring to keep smooth. Add broth to butter/flour mixture, stirring constantly to deep smooth. Cook until thick and bubbly. Add broccoli to soup base and simmer for 10 minutes. Add seasonings, cheese, nutmeg and milk. Stir until all ingredients are well blended.

May be thinned with more milk. May be frozen. If you want it a bit thicker, you can add a few instant potato flakes. It adds more body and tastes great.
