Broccoli casserole



  • eggs, beaten - 2 item
  • butter or oleo - 1/2 c
  • mayonnaise - 1 c
  • Cheddar cheese - 1 c
  • can mushroom soup - 1 item
  • frozen or 1 bunch broccoli - 2 oz
  • Ritz cracker crumbs approximately 16 crackers - 1 c
  • small can water chestnuts, drained optional - 1 item

How to make broccoli casserole:

Cook broccoli. Drain, chop and if using chestnuts, add to broccoli. Combine soup, mayonnaise, eggs and cheese. Add to broccoli mixture. Put in 9-inch square baking dish or 2-quart casserole. Sprinkle cracker crumbs on top and dot with butter. Bake 35 to 40 minutes at 350°.
