Broccoli and cheddar soup
Ingredients/Components
- salt - 1 tsp
- nutmeg - 1/4 tsp
- margarine - 3 Tbsp
- light cream - 2 c
- chopped onion - 1/4 c
- grated Cheddar cheese - 1 c
- cornstarch or flour - 3 Tbsp
- chopped broccoli
- chicken broth or 2 c - 2 c
How to make broccoli and cheddar soup:
In large saucepan, cook broccoli until soft; drain. In small pan, saute onion in margarine. Add cornstarch and slowly add broth and cream. Stir and cook until thickens. Add salt, nutmeg and broccoli. Just before serving, stir in cheese.Recipe categories: Lunch/snacks, Soups & stews, Main dish.
