  • brown sugar - 1 c
  • water - 2 qt
  • allspice - 1 Tbsp
  • soy sauce - 1/2 c
  • plain salt - 1 c
  • crushed bay leaves - 2 item
  • a few whole cloves - 1 item

How to make brine for smoking salmon or trout:

Marinate overnight. Rinse fish thoroughly and let air dry approximately 1 hour. Smoke 4 to 6 hours depending on size of fish. Pierce skin before smoking.
