Ingredients/Components
- brown sugar - 1 c
- water - 2 qt
- allspice - 1 Tbsp
- soy sauce - 1/2 c
- plain salt - 1 c
- crushed bay leaves - 2 item
- a few whole cloves - 1 item
How to make brine for smoking salmon or trout:
Marinate overnight. Rinse fish thoroughly and let air dry approximately 1 hour. Smoke 4 to 6 hours depending on size of fish. Pierce skin before smoking.Recipe categories: Condiments, etc., Salmon, Trout.
