Ingredients/Components

  • salt - 1/2 tsp
  • chopped onion - 1 Tbsp
  • chopped mushrooms - 1/4 c
  • chopped pepper - 1 Tbsp
  • shredded part-skim Mozzarella cheese - 6 oz
  • dash of freshly ground pepper - 1 item
  • low-fat milk 2% - 3/4 c
  • refrigerated 9-inch pie crust - 1 item
  • crumbled turkey sausage - 4 oz
  • large eggs or cholesterol-free egg product equivalent - 4 item

How to make breakfast pie:

Preheat oven to 425°. Prick crust several times with fork. Line with aluminum foil. Bake until lightly browned, 10 to 12 minutes. Place crust on rack to cool completely. Reduce oven heat to 375°. Place half the cheese in the baked pie shell. Top evenly with sausage, mushroom, onion and green pepper. Sprinkle evenly with remaining cheese.

In medium bowl, whisk eggs or thawed egg substitute, milk, salt and pepper. Pour over filled pie crust. Bake for 45 minutes, until knife inserted in center comes out clean. Cool and cut into 6 to 8 servings.
