Ingredients/Components

  • sugar - 1/2 tsp
  • eggs - 2 item
  • milk - 2 Tbsp
  • salt - 1/2 tsp
  • butter - 1 Tbsp
  • vegetable oil - 2 Tbsp
  • garlic salt - 1/4 tsp
  • chopped onion - 2 Tbsp
  • chopped green pepper - 2 Tbsp
  • shredded Cheddar cheese - 1/2 c
  • chopped tomatoes
  • minced parsley - 2 Tbsp
  • black pepper - 1 item
  • Drain
  • 6-inch tortillas - 4 item
  • minced cilantro - 2 Tbsp
  • green chiles - 1/2 c
  • tomato, peeled, seeded and chopped - 1 item
  • bulk chorizo sausage - 1/4 lb
  • Burrito Sauce or mild salsa, warmed - 1 item

How to make breakfast burritos:

Cook sausage, onion and green pepper until done. Drain. Beat eggs, milk and black pepper together. Melt butter in skillet. Add egg mixture. Cook, without stirring, until eggs begin to set on bottom and around edges. Using spatula, lift and fold partially cooked eggs so uncooked egg flows underneath. Cook until done. Remove from heat.

Divide sausage mixture among 4 tortillas. Top sausage with 1/2 of eggs, tomato and cheese. Fold in sides, bottom and top to cover filling. Secure with a wooden pick. Arrange on baking sheet. Bake at 350° for 15 minutes. Serve with warm Burrito Sauce.Burrito Sauce:1 c. chopped onion2 Tbsp. vegetable oil3 1/2 c. chopped tomatoes1/2 c. green chiles2 Tbsp. minced parsley1/2 tsp. sugar1/2 tsp. salt1/4 tsp. garlic salt black pepper2 Tbsp. minced cilantro Saute onion in oil for 5 minutes. Add tomatoes, chiles, sugar, salt, garlic salt and black pepper. Simmer for 15 minutes, until thickened. Stir in parsley and cilantro.
