Ingredients/Components

  • sugar - 1 c
  • eggs - 2 item
  • salt - 1/2 tsp
  • flour
  • soda
  • buttermilk - 2 c
  • boiling water - 1 c
  • shortening - 1/2 c
  • nuts - 1/2 c
  • seedless raisins - 1 c
  • 40% bran flakes - 1 c
  • All-Bran - 2 c

How to make bran muffins:

Pour the boiling water over the raisins. Add the soda. Cool. Cream the shortening and sugar. Add the eggs and buttermilk. Fold into the flour, salt, nuts, All-Bran and bran flakes. Mix all only until moist. Store in covered bowl in refrigerator until ready to bake at 325° for 20 to 25 minutes in greased muffin tins. Batter will keep in refrigerator up to 6 weeks.
