Ingredients/Components

  • sugar - 2 c
  • oil - 1 c
  • buttermilk - 1 qt
  • eggs, beaten - 4 item
  • baking soda - 5 tsp
  • boiling water - 2 c
  • all-purpose flour - 2 c
  • rolled oats - 2 c
  • salt optional - 1/2 tsp
  • whole wheat flour - 3 c
  • All-Bran or 100% bran cereal - 4 c

How to make bran muffins:

Combine oats and water and let cool. Combine eggs, sugar and oil and beat well. Combine flour, soda and salt and add to the oat and sugar mixture alternately with the buttermilk. Stir in the All-Bran. Store in covered container overnight. May keep dough up to 6 weeks in refrigerator. Before baking, mix again thoroughly. Spoon into greased tins. Bake at 375° for 25 to 30 minutes. Makes 5 to 6 dozen.
