  • sugar - 1/2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • milk
  • salt - 1/2 tsp
  • flour
  • baking powder - 1 Tbsp
  • baking soda - 1 tsp
  • vegetable oil - 1/4 c
  • all-purpose flour
  • margarine - 1/2 c
  • egg, beaten - 1 item
  • unsweetened applesauce - 1/3 c
  • fresh or frozen blueberries
  • chopped pecans optional - 1/2 c
  • nonfat yogurt - 1/2 c
  • All-Bran cereal - 2 c
  • fruit sweetener - 1/3 c

How to make bran muffins:

Cream margarine, fruit sweetener, applesauce and yogurt. Beat in eggs, one at a time. Combine dry ingredients separately and stir into batter. Add vanilla; add blueberries and nuts. Spoon batter into 15 muffin cups which have been sprayed with nonstick coating. Bake for 20 to 25 minutes at 350°. Makes 15 muffins.

One muffin equals 1 bread, 1 1/2 fat exchanges, 140 calories, 17 grams carbohydrates, 3 grams protein, 7 grams fat, 283 mg sodium and 37 mg cholesterol.

Note: Addition of pecans adds 24 calories and 2 grams of fat per muffin.
