Ingredients/Components
- sugar - 1/2 c
- eggs - 2 item
- vanilla - 1 tsp
- milk
- salt - 1/2 tsp
- flour
- baking powder - 1 Tbsp
- baking soda - 1 tsp
- vegetable oil - 1/4 c
- all-purpose flour
- margarine - 1/2 c
- egg, beaten - 1 item
- unsweetened applesauce - 1/3 c
- fresh or frozen blueberries
- chopped pecans optional - 1/2 c
- nonfat yogurt - 1/2 c
- All-Bran cereal - 2 c
- fruit sweetener - 1/3 c
How to make bran muffins:
Cream margarine, fruit sweetener, applesauce and yogurt. Beat in eggs, one at a time. Combine dry ingredients separately and stir into batter. Add vanilla; add blueberries and nuts. Spoon batter into 15 muffin cups which have been sprayed with nonstick coating. Bake for 20 to 25 minutes at 350°. Makes 15 muffins.One muffin equals 1 bread, 1 1/2 fat exchanges, 140 calories, 17 grams carbohydrates, 3 grams protein, 7 grams fat, 283 mg sodium and 37 mg cholesterol.
Note: Addition of pecans adds 24 calories and 2 grams of fat per muffin.
