Bran muffins
Ingredients/Components
- sugar - 3 c
- salt - 2 tsp
- soda - 5 tsp
- buttermilk - 1 qt
- vegetable oil - 1 c
- plain flour - 5 c
- eggs, beaten or Egg Beaters - 4 item
- box Kelloggs Common Sense oat bran - 1/3 oz
- box Nabisco 100% bran - 1/3 oz
- to 1 box raisins optional - 3/4 item
How to make bran muffins:
Use 3 to 4 quart bowl. Mix sugar, eggs, oil and buttermilk. Mix flour, salt and soda. When mixing, I alternate buttermilk with flour until mixed thoroughly, ending with flour. Then add cereal, stirring from the bottom of bowl, mixing well. Raisins can be added before or after cereal. Cover and store in refrigerator up to 6 weeks.To bake, fill greased muffin pan 2/3 full or use cupcake liners. Bake at 400° for 15 to 20 minutes. Makes 1 gallon.
When dividing the 2 cereals equally into 3 parts, I then freeze the three bags and keep for later use. Allow to set overnight in refrigerator before baking to soften cereal.
