Ingredients/Components
- oil - 1 c
- granulated sugar
- eggs - 3 item
- buttermilk - 3 c
- bran - 3 c
- flour
- baking powder
- salt - 1 tsp
- vanilla - 1 tsp
- baking soda, dissolved in 1/2 c - 2 tsp
- raisins or chopped nuts - 2 c
How to make bran muffins:
Combine all ingredients. Let stand in the refrigerator for 24 hours before using. Bake in 425° oven for 15 to 20 minutes. Use as needed, as the batter keeps, refrigerated, for 1 month. Makes 5 dozen.Recipe categories: Breads, Quick breads, Muffins.
