Bran muffins

Bran muffins



  • sugar - 1 c
  • eggs - 4 item
  • salt - 1 tsp
  • oil - 1 c
  • baking soda - 5 tsp
  • boiling water - 2 c
  • chopped walnuts - 1 c
  • sifted flour
  • raisins - 2 c
  • sour milk - 1 qt
  • 40% bran flakes - 2 c
  • all-bran or Fiber One - 4 c

How to make bran muffins:

Add raisins and baking soda to boiling water. Cool. Mix in huge bowl: flour, salt, sugar, all-bran or Fiber One, bran flakes and chopped walnuts. In another bowl, beat eggs, sour milk and oil. Blend and add to cooled raisin mixture and add to dry ingredients. Mix. Fill greased muffin tins about 3/4 full. Sprinkle top of each one with brown sugar. Bake at 350° for 20 to 22 minutes. Makes about 55 muffins.

Note: Mixture may be kept in the refrigerator for several days and bake them when you have time. Baked muffins may be frozen and thawed, as needed.
