Bran muffins
Ingredients/Components
- sugar
- eggs - 2 item
- salt - 1/2 tsp
- flour
- buttermilk - 2 c
- chopped dates - 1/4 lb
- baking soda
- boiling water - 1 c
- chopped walnuts - 1 c
- raisins - 1 c
- margarine - 1/2 c
- 100% bran 1 c - 3 c
How to make bran muffins:
Mix 1 cup bran and water and let stand 1/2 hour. Cream together margarine, salt and sugar. Add eggs. Add buttermilk and mix. Add dates, raisins and nuts. Add flour, baking soda and 2 cups 100% bran and stir until just blended. Add bran and water mixture. Stir only to blend. Bake at 350° for 20 to 25 minutes. Makes 24 to 30 muffins.Note: Keep in refrigerator up to 6 weeks.
