Ingredients/Components
- cinnamon - 2 tsp
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- brown sugar - 1 c
- baking powder - 1 tsp
- baking soda - 2 tsp
- raisins - 1/2 c
- shredded carrots
- bananas - 2 item
- skim milk - 3/4 c
- oat bran - 3/4 c
- shredded apples - 2 item
- oat flour
- flax seed ground - 3/4 c
How to make bran flax muffins:
Mix together flour, flax seed, bran, sugar, baking soda, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Get combined milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened; do not overmix. Fill muffin cups 3/4 full. Bake at 350° for 15 to 20 minutes. Makes 15 medium-size muffins.Ground flax seed can be substituted for shortening or cooking oil at a ratio of 3 to 1 in baked goods. For example, 1 1/2 cups of flax seed can replace 1/2 cup butter, margarine or cooking oil in a recipe.
Flax seed is high in the Omegas and fiber.
