Blueberry zucchini bread
Ingredients/Components
- eggs - 3 item
- oil olive okay - 1 c
- sugar - 2 c
- grated zucchini - 2 c
- vanilla - 3 tsp
- sifted flour - 3 c
- salt - 1 tsp
- baking soda - 1 tsp
- cinnamon - 3 tsp
- baking powder - 1 tsp
- dash of nutmeg - 1 item
- chopped nuts - 1/2 c
- blueberries - 1 c
How to make blueberry zucchini bread:
Beat eggs until light and foamy. Add oil, sugar, grated zucchini and vanilla. Mix lightly but well. Add flour, salt, soda, spices and baking powder (all sifted). Blend well. Add nuts and berries. Use 2 (9 x 5 x 2) loaf pans. Bake at 325° for 1 hour. Makes 2 breads. Very delicious!Recipe categories: Breads, Quick breads, Summer.
