Blueberry tea cake



  • sugar
  • cinnamon - 1 tsp
  • vanilla - 2 tsp
  • milk - 2/3 c
  • salt
  • flour - 3 c
  • eggs, beaten - 2 item
  • baking powder - 4 tsp
  • butter or margarine, melted - 6 Tbsp
  • blueberries - 2 c

How to make blueberry tea cake:

Preheat oven to 400°. Season 3-quart shallow baking dish (9 x 13-inch). In medium bowl, beat eggs. Gradually beat in sugar. Beat well.

Sift together flour, baking powder, cinnamon and salt. Add to sugar mixture alternately with milk. Beat well after each addition. Add butter and vanilla. Beat thoroughly. Fold in blueberries. Pour batter into prepared pan (it is very thick). Sprinkle top with sugar. Bake 35 to 40 minutes or until top springs back when lightly touched. Serve warm with butter and enjoy.
