Blueberry streusel muffins



  • sugar - 1/3 c
  • cinnamon - 1/2 tsp
  • vanilla - 1 tsp
  • milk - 1 c
  • butter or margarine - 1/4 c
  • salt - 1/2 tsp
  • flour
  • butter - 1/4 c
  • baking powder - 4 tsp
  • egg, beaten - 1 item
  • fresh or frozen blueberries

How to make blueberry streusel muffins:

Streusel:1/2 c. sugar1/3 c. flour1/2 tsp. cinnamon1/4 c. butter Cream sugar and butter. Add egg; mix well. Combine flour, baking powder and salt. Add to the creamed mixture alternately with milk. Stir in vanilla. Fold in blueberries. Fill two greased or paperlined cups 2/3 full.

In a small bowl, combine sugar, flour and cinnamon. Cut butter until crumbly. Sprinkle over muffins. Bake at 375° for 25 to 30 minutes or until browned. Yield: 1 dozen.
