Ingredients/Components

  • sugar - 1/3 c
  • milk - 1 c
  • vanilla extract - 1 tsp
  • butter or margarine - 1/4 c
  • salt - 1/2 tsp
  • baking powder - 4 tsp
  • all-purpose flour
  • butter or margarine, softened - 1/4 c
  • ground cinnamon - 1/2 tsp
  • fresh or frozen blueberries

How to make blueberry streusel muffins:

Streusel:1/2 c. sugar1/3 c. all-purpose flour1/2 tsp. ground cinnamon1/4 c. butter or margarine In mixing bowl, cream sugar and butter. Add egg; mix well. Combine flour, baking powder and salt. Add to the creamed mixture alternately with milk. Stir in vanilla. Fold in blueberries. Fill 12 greased or paper-lined muffin cups two-thirds full. In small bowl, combine sugar, flour and cinnamon. Cut in butter until crumbly. Sprinkle over muffins. Bake at 375° for 25 to 30 minutes or until browned. Makes 1 dozen.
