Blueberry pudding
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1/2 tsp
- milk - 1/2 c
- salt - 1/4 tsp
- flour - 1 c
- butter - 3 Tbsp
- cornstarch - 1 Tbsp
- baking powder - 1 tsp
- pinch of salt - 1 item
- boiling water - 1 c
- blueberries - 2 c
- juice of 1/2 lemon
How to make blueberry pudding:
Place blueberries in an 8 x 8 x 2-inch pan. Sprinkle with lemon juice and cinnamon. Cream 3/4 cup sugar with butter. Add milk. Sift baking powder, salt and flour. Add to butter mixture. Spread batter over blueberries. Mix 1 cup sugar, salt and cornstarch. Sprinkle over batter. Pour 1 cup boiling water over; do not stir. Bake at 375° for 1 hour.
