Ingredients/Components

  • sugar - 1 c
  • butter or margarine - 1 Tbsp
  • salt - 1 tsp
  • flour - 1/4 c
  • cold water - 6 7
  • shortening - 2/3 c
  • dash of salt - 1 item
  • lemon juice - 2 tsp
  • finely shredded lemon peel - 1/2 tsp
  • fresh or 20 oz - 5 c

How to make blueberry pie:

Pie Crust:2 c. flour1 tsp. salt2/3 c. shortening6 to 7 Tbsp. cold water Pie Crust: Combine ingredients. Divide and roll into 2 crusts; set aside.

In a mixing bowl, combine sugar, flour, lemon peel and salt. Add sugar mixture to blueberries; toss to coat fruit. Place 1 crust in pie pan. Fill with blueberry mixture. Drizzle with lemon juice; dot with butter. Add top crust; seal and flute edges. Cover edge of pie with foil. Bake at 375° for 20 minutes. Remove foil; bake for 20 to 25 minutes. Cool on wire rack.
