Blueberry oatmeal muffins
Ingredients/Components
- sugar - 1/2 c
- salt - 1/2 tsp
- buttermilk
- baking powder - 1 tsp
- baking soda - 3/4 tsp
- vegetable oil - 5 Tbsp
- egg - 1 item
- oatmeal
- blueberries - 1 c
- whole wheat flour - 3/4 c
- white flour - 3/4 c
- wheat germ optional - 2 Tbsp
- soy flour or increase whole wheat - 1/4 c
How to make blueberry oatmeal muffins:
Mix buttermilk, oil and egg; soak oatmeal in liquids. Mix dry ingredients. Add dry ingredients to liquids; stir just to mix. Fold in blueberries. Spoon into 18 average size muffin cups, greased or sprayed with nonstick spray. Bake at 400° about 20 minutes.Variation: Use 1 1/2 cups sliced cranberries and increase sugar to 3/4 cup; let cranberries sit in 1/4 cup sugar.
