  • oatmeal
  • flour
  • sugar - 1/3 c
  • baking powder - 1 Tbsp
  • salt - 1/2 tsp
  • milk - 1 c
  • egg - 1 item
  • vegetable oil - 1/4 c
  • fresh or frozen blueberries - 3/4 c
  • cinnamon - 2 tsp
  • bread flour, sifted - 2 c
  • baking soda - 1/2 tsp
  • butter or margarine - 1/4 c
  • ripe bananas, mashed - 2/3 c
  • sweet milk - 3 Tbsp
  • chopped nuts optional - 1 c

How to make blueberry oat muffins:

Topping:2 Tbsp. sugar2 tsp. cinnamon2 c. bread flour, sifted1 tsp. baking powder1/2 tsp. baking soda1/4 tsp. salt3/4 c. sugar1/4 c. butter or margarine2/3 c. ripe bananas, mashed1 egg3 Tbsp. sweet milk1 c. chopped nuts (optional) Sift together flour, baking powder, soda and salt. Set aside. Cream sugar and butter (or margarine) until light. Add egg and bananas; beat until light. Stir in milk and flour mixture, and nuts if desired. Pour into well-greased and floured bread loaf pans, approximately 2/3rds full.

Bake at 350° for about an hour. Use a toothpick to test whether it is done. The bread will also pull away a little from the sides of the loaf pan, be brown and humped on top; these signs will help you decide whether to insert the toothpick or leave it alone! Makes 2 loaves.
