Ingredients/Components
- salt - 1/4 tsp
- brown sugar - 3/4 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- egg whites - 2 item
- oatmeal - 1/3 c
- blueberries
- oat bran - 1/3 c
- wheat germ - 1/3 c
- canola oil - 1/4 c
- unbleached white flour - 1 c
- 1% buttermilk - 1 c
How to make blueberry muffins:
Combine oil, brown sugar, flour, baking powder, baking soda and salt. Add buttermilk, egg whites, oat bran, oatmeal and wheat germ; mix with spoon to moisten. Stir in blueberries. Fill paper-lined muffin tins 3/4 full with batter. Bake at 400° for 20 minutes or until done. Cool and serve.Recipe categories: Breads, Quick breads, Muffins.
