  • sugar - 1 Tbsp
  • cinnamon
  • vanilla - 1/2 tsp
  • milk
  • salt - 1 tsp
  • eggs, beaten - 3 item
  • baking powder - 1 Tbsp
  • baking soda - 1/2 tsp
  • butter, melted - 1/2 c
  • whole wheat flour - 1 c
  • white flour - 2 c
  • banana, mashed - 1 item
  • raw sugar - 2/3 c
  • blueberries, thoroughly drained - 2 c

How to make blueberry muffins:

Topping:1 Tbsp. cinnamon1 Tbsp. sugar Preheat oven to 400°. Line muffin tin with cups. Sift flours, baking soda, baking powder and salt. Stir in the raw sugar. In another bowl, combine the banana, eggs, milk, vanilla and butter. Add the egg mixture to the dry ingredients and stir together with 12 to 17 quick strokes. Batter will be lumpy and streaked with dry ingredients, but it is essential not to overblend or the muffins will be tough. Lightly fold in the blueberries with just 5 or 6 strokes. This will complete the mixing although some uneveness will remain. If batter is smooth, it is overmixed. Fill muffin cups 3/4 full. Sprinkle with topping. Bake in center of oven for 25 minutes or until toothpick comes out clean.
