Blueberry muffins
Ingredients/Components
- sugar - 1/2 c
- vanilla extract - 1 tsp
- salt - 1/2 tsp
- flour - 2 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- vegetable oil - 1/2 c
- egg - 1 item
- blueberries - 1 c
- plain yogurt - 1 c
How to make blueberry muffins:
Preheat oven to 350°. Grease 12 muffin tins. Sift together the flour, baking powder and salt. In a separate bowl, combine yogurt with baking soda. Set aside. Beat egg in a third bowl, then add the oil, sugar and vanilla. Stir to combine. Add flour mixture and yogurt mixture alternately to egg mixture. Gently fold in berries. Pour into muffin tins. Bake for 25 to 30 minutes, or until lightly browned on top. Cool for 5 minutes, then remove from tins and cool on rack.Recipe categories: Breads, Quick breads, Muffins.
