Blueberry muffins
Ingredients/Components
- sugar - 1/4 c
- milk - 3/4 c
- baking powder
- well beaten egg - 1 item
- dash of salt - 1 item
- sifted flour
- salad oil - 1/3 c
- blueberries - 1 c
How to make blueberry muffins:
Sift dry ingredients together. Make a well in mixture. Add, in order, egg, milk and oil. Beat until mix is just moistened. Add blueberries and mix until berries are well distributed. Fill greased muffin tins 2/3's full. Bake at 400° for 20 minutes. Makes 12 to 14 muffins.Blueberries may be eliminated and in their place add 1 cup chopped walnuts for a nice nut muffin.
I always sprinkle tops with cinnamon-sugar for a nice finish.
