  • cinnamon - 1/2 tsp
  • granulated sugar - 2 Tbsp
  • salt - 1/8 tsp
  • flour - 1 Tbsp
  • all-purpose flour - 1 c
  • butter room temperature - 1/2 c
  • distilled white vinegar - 1 Tbsp
  • blueberries, rinsed and picked over - 5 c

How to make blueberry kuchen:

Filling:1/3 c. granulated sugar1 Tbsp. flour1/2 tsp. cinnamon5 c. blueberries, rinsed and picked over With rack in lowest position, heat oven to 400°. Have ready an 8-inch loose bottom spring-form pan.

Crust: Mix flour, sugar and salt in bowl. Cut in butter until particles resemble coarse crumbs. Sprinkle vinegar and shape dough into flat circle. Press dough 1/4-inch thick over bottom of pan and less thick up sides (go up 1 1/4-inches on sides).

Filling: Mix sugar, flour and cinnamon in a large bowl. Add 3 cups blueberries and toss to coat. Spoon into crust and sprinkle sugar mixture left in bowl over berries. Bake on low rack 50 to 60 minutes until crust browns and filling bubbles. Remove to wire rack and while hot, sprinkle remaining 2 cups blueberries on top. Cool in pan on rack. Dust lightly with confectioners sugar.
