Blueberry gems



  • sugar
  • milk - 1/2 c
  • vanilla extract - 1 tsp
  • self-rising flour - 2 c
  • salad oil - 1/2 c
  • blueberries - 1 c
  • eggs, slightly beaten - 2 item

How to make blueberry gems:

Combine flour and sugar in a large bowl; set aside. Combine eggs, vanilla, oil and milk. Make a well in the center of the dry ingredients. Pour in the liquid mixture. Stir until well mixed. Fold in the blueberries and stir 1 minute. Put batter into muffin tins, filling about half full. Bake at 375° for 25 minutes. Yield: 2 dozen.
