Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1 c
- salt - 1 tsp
- flour - 4 c
- baking powder - 4 tsp
- margarine - 1/2 c
- blueberries - 3 c
How to make blueberry coffee cake:
Cream together 1/2 cup margarine, 1 1/2 cups sugar, eggs and vanilla. Sift together 4 cups flour, baking powder and salt. Add to creamed mixture with milk; mix well. Gently fold in blueberries. Pour into greased angel food pan.With pastry blender, mix 1/2 cup sugar, 1/2 cup flour, 1/4 cup margarine and cinnamon; sprinkle on top of batter. Bake at 350° for 60 minutes.
Other Pans: Bake a 13 x 9-inch pan for 50 minutes. Bake 3 loaf pans for 55 minutes. Bake cupcake pans for 35 minutes.
