  • milk - 1/2 c
  • salt - 3/4 tsp
  • flour
  • baking powder - 2 tsp
  • egg - 1 item
  • butter or margarine, melted - 3 Tbsp
  • melted butter or margarine - 1 Tbsp
  • fresh blueberries - 1 c
  • sugar, divided - 10 Tbsp

How to make blueberry coffee cake:

In a mixing bowl, blend egg and 8 tablespoons sugar. In a separate bowl, sift together flour, baking powder and salt. Alternately add flour and milk to egg mixture; beat well after each addition. Stir in 3 tablespoons melted butter. Fold in blueberries. Turn batter into a greased 8-inch square baking pan. Sprinkle with remaining 2 tablespoons sugar. Cover and refrigerate overnight. Bake at 350° for 35 minutes until top springs back when lightly touched. Brush top with remaining butter. Cool in pan on a wire rack.
