Blueberry coffee cake
Ingredients/Components
- milk - 1/2 c
- salt - 3/4 tsp
- flour
- baking powder - 2 tsp
- egg - 1 item
- butter or margarine, melted - 3 Tbsp
- melted butter or margarine - 1 Tbsp
- fresh blueberries - 1 c
- sugar, divided - 10 Tbsp
How to make blueberry coffee cake:
In a mixing bowl, blend egg and 8 tablespoons sugar. In a separate bowl, sift together flour, baking powder and salt. Alternately add flour and milk to egg mixture; beat well after each addition. Stir in 3 tablespoons melted butter. Fold in blueberries. Turn batter into a greased 8-inch square baking pan. Sprinkle with remaining 2 tablespoons sugar. Cover and refrigerate overnight. Bake at 350° for 35 minutes until top springs back when lightly touched. Brush top with remaining butter. Cool in pan on a wire rack.Recipe categories: Breads, Blueberries, Coffee cakes.
