Blueberry coffee cake
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 2 tsp
- vanilla - 1 tsp
- milk - 1/2 c
- salt - 1/4 tsp
- flour - 1 c
- brown sugar
- baking powder - 3 tsp
- melted butter - 2 tsp
- shortening - 1/4 c
- egg, well beaten - 1 item
- blueberries, drained - 1 c
How to make blueberry coffee cake:
Topping:1/2 c. brown sugar2 tsp. cinnamon2 tsp. melted butter Cream sugar and shortening. Mix flour, salt and baking powder. Mix milk, beaten egg and vanilla; add to sugar and shortening, alternating. Beat well; add drained blueberries. Mix topping and sprinkle over top. Use a square baking pan. Bake at 375° for 25 to 30 minutes. You can also add the blueberries to the topping mix instead of putting in the cake batter.Recipe categories: Breads, Blueberries, Coffee cakes.
