Blueberry coffee cake
Ingredients/Components
- sugar - 2/3 c
- milk - 3/4 c
- salt - 1/2 tsp
- chopped nuts - 1/4 c
- flour
- baking powder
- egg - 1 item
- brown sugar, packed - 1/4 c
- plus 2 Tbsp - 1/3 c
- allspice - 1/2 tsp
- blueberries - 2 c
How to make blueberry coffee cake:
Mix 1 cup berries and 1/4 cup flour. In medium bowl, stir together 1 3/4 cups flour, sugar, baking powder and salt. Add 1/3 cup shortening, milk and egg; beat until smooth. Stir in floured berries. Pour into 9-inch baking pan. Sprinkle 1 cup blueberries over the top.In small bowl, mix remaining 1/4 cup flour, 2 tablespoons shortening, nuts, brown sugar and allspice until crumbly. Sprinkle over berries. Bake at 375° for 45 to 50 minutes or until toothpick inserted in center comes out clean. Serve warm or cold.
