Ingredients/Components

  • vanilla - 1 tsp
  • flour - 3 Tbsp
  • cornstarch - 1 Tbsp
  • egg whites - 2 item
  • lemon juice - 2 tsp
  • low-fat cottage cheese - 12 oz
  • fresh or frozen blueberries - 1 c
  • frozen orange juice concentrate - 1/4 c
  • plain, low-fat yogurt - 1/2 c
  • ripe bananas, cut up - 2 item
  • Add orange juice, bananas and flour
  • envelopes artificial sweetener - 3 item

How to make blueberry cheesecake:

Blend cheese, egg whites, yogurt, vanilla and lemon juice in a food processor or blender. Add orange juice, bananas and flour. Blend until creamy. Bake in a large pie pan on graham cracker crust for 45 minutes at 350°.

For crust, add just enough margarine to hold cracker crumbs in place and no sugar.Topping:1 c. undrained, crushed pineapple1/4 c. frozen orange juice concentrate1 Tbsp. cornstarch1 c. fresh or frozen blueberries3 envelopes artificial sweetener Combine the pineapple, orange juice concentrate, cornstarch and blueberries. Cook over medium heat, stirring constantly until sauce thickens. Remove from heat. Add sweetener. Cool and pour over pie.

A can of cherry pie filling may be used for topping instead of blueberry mixture.
