Blueberry cake



Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla
- salt - 1 tsp
- flour - 3 c
- baking powder - 2 tsp
- vegetable oil - 1 c
- orange juice - 2/3 c
- fresh blueberries or 1 frozen pkg - 3 c
How to make blueberry cake:
Sift into mixing bowl flour, sugar, salt and baking powder. Add oil, eggs, orange juice and vanilla. Beat until smooth, about 2 to 2 1/2 minutes. Grease and flour 9 x 13-inch pan. Pour half the cake mixture into pan, then the berries which have been tossed with the sugar and cinnamon. Then the rest of the cake mixture again. Top with any blueberries that are left. Bake at 350° for 45 minutes to 1 hour. Cool in pan. Sprinkle with confectioners sugar.Recipe categories: Desserts, Cakes, Blueberries.
